In 2022, Seven Sundays encountered a challenge when sourcing oats for their muesli production. Widespread droughts across the northern plains resulted in a significant oat shortage, while the demand for oat milk increased. Undeterred by this setback, the innovative minds at Seven Sundays embarked on a mission to find a sustainable solution. They turned to the surplus protein and fibre-rich leftovers from oat milk production and transformed them into the foundation of their upcycled cereal.

Oaty is back and stronger than ever! Let us introduce you to the show's star: Oaty, the upcycled oat protein in this remarkable cereal. Oaty may be a novel ingredient to some, but it all begins with an oat. Oaty originates from the pulpy remnants left behind after extracting oat milk. Usually discarded as waste, it has three times the protein and twice the fibre content of a whole oat. But now, Oaty has found a new purpose in breakfast cereal.

Oat milk is a simple process. The oats are soaked in water, milled, and then pressed through a screen to separate the milk from the leftover oat pulp. During this process, the creators of Upcycled Oat Protein Cereal realised the incredible amount of creamy, nutrient-dense pulp that remained unused. Inspired by this realisation, they began incorporating the pulp into their morning oats and experimented with a favourite cookie recipe.

The creators then upscaled this homemade process to a large-scale commercial oat milk production facility. The sheer volume of nutrient-dense oat pulp left unused quickly became apparent.

Currently, this pulp finds applications in land fertilisation or as animal feed. However, the team behind Upcycled Oat Protein Cereal saw the opportunity to harness the full potential of this resource. It's important to note that the only difference between large-scale oat milk production and the home process lies in the scale of equipment and the use of an enzyme to break down starches.

After removing the pulp, emulsifiers, preservatives, seed oils, or "natural" flavours are added to the oat milk. The upcycled oat protein in this cereal is real food derived from creamy North American oats.
